Harsch Earthenware Fermentation Crock
Made in Germany
After reading about the health benefits of unpasturized lactic
acid-fermented vegetables, we were convinced that adding them to our diet
would be a beneficial step. Sauerkraut is hard to find unpasturized and other
dvegetables are virtually unobtainable. So we set out to ferment our own with memories
of skimming slime from past experiences. Thus we were delighted to discover
a new fermentation crock manufactured by Harsch, a German company that has
a patented gutter and lid which creates a water seal that does away with the need for constant
cleaning. The Harsch crock makes it easy for you to ferment and eat fresh,
locally grown vegetables. It eliminates the need for the skimming of kahm yeast,
a white slimy substance that forms on the top of the sauerkraut where there
is access to fresh air. While the kalm is not in the least harmful, it is disgusting, and
it is so nice not having to wash the cloth, board or stone covering on a
regular basis during fermentation. Kept in a cool place, the Harsch crock can be
left alone for months while the vegetables inside get
better and better. The only chore that these crocks demand is that you
occasionally top up the water in the gutter that seals off the contents from the
The Harsch Fermentation Crocks are covered with a lead free glaze and are
very easy to clean. They feature sturdy carrying handles that add to the
stability of the gutter by acting as buttresses. The crocks come with two small,
semicircular, stoneware "weight stones" that are designed to rest on top of the
vegetables to create the pressure needed for fermentation, and to protect the
food from decay. With the Harsch Crock there is no need for the traditional paraphernalia of
cloth, board or stone, and best of all the kahn yeast no longer forms.
Simple instructions with recipes are included with the crocks.
We are sorry the Harsch crocks are out of stock. Please check out one of the other fine
crocks below. Call us at 1-888-891-8411 for Harsch replacement lids and stones.
European-Style Fermenting Crocks
Made in USA
These traditional European style Fermentation Crocks bring you old world functionality with an American
flare. The signature Ohio Stoneware blue on white glaze is lead free and won't absorb taste or odors,
plus it is easy to clean.
Natural lactic acid fermentation is one of the oldest, easiest and healthiest ways to preserve food. It allows vegetables to retain more vitamins, minerals and enzymes while improving their flavor and digestibility. The Romans, Chinese and Japanese all used lactic acid fermentation extensively. It was also well know by seafarers that sauerkraut helped protect one from getting scurvy and other illnesses. Because of these benefits, and the ease of preparation in these Ohio Stoneware Crocks, lactic acid fermentation (pickling) is experiencing a revival today.
With the lid water lock system, worrying about dust and skimming slime off the top of your crock is a thing of the past. This system, along with the weight stones, make the Ohio Stoneware fermentation crocks much easier to use than open top stoneware pots, which must be tended often and very carefully. With these crocks you only need to check that the water in the gutter is topped off until you are ready to check to see if your kraut or pickles are done. They are great for pickling beans, beets, cabbage, cauliflower, celery, cucumbers, onions, peppers, tomatoes, turnips and more.
These Pickling Crocks come complete with lid, weight stones and an instruction sheet featuring a few recipes to get you started. Dia. 11" Ht. 15.5" Wt. 25lbs

growth and unpleasant odors. No more skimming of kahm yeast or trying to find a makeshift weight to hold
your vegetables under the brine.
The Nik Schmitt crocks can help you enjoy pickling almost any vegetable including cabbage,
pumpkin, cucumber, carrots, and more. They are great for making traditional treats such as sauerkraut,
kosher dills, kimchi, sour beans, hot sauce, and pickled peppers. Simple instructions with recipes

Polish Fermentation Pots
These beautifully crafted, honey pot style stoneware crock pots are the perfect aid in
pickling your vegetables, and making delicious and nutritious sauerkraut.
They are made in Poland, where the highly enriched vitrified clays
provide the strongest and most elegant building material for clay pottery and ceramics. These fermentation crock
pots are made by craftsmen who carry on this traditional art form that has been passed down to them.
These crocks are designed with an airtight,
water-sealable cover so that you do not have to repeatedly open them to scrape off surface mold, yeast or scum. You simply
pour a small amount of water into the channel on top, and the cover's design will allow fermentaion gases to escape
without letting oxygen in. These crock pots bring to your kitchen the trouble free way of pickling.
You don't even need to check inside until you think your kraut or pickles might be done!
We include a set of weight stones free with your crock so you are all set to go.
Be sure to have a look at our Mandolin and Cabbage Slicers

your Sauerkraut at the ideal temperature while fermenting.
The new world was discovered because of Europe's desire to find a trade route to the spices of the orient. Once you
start making Saurkraut you'll find that the variety of tastes you can concoct is limited only by your creativity.
To help you with the ancient art of lactic acid fermentation we offer you a
variety of traditional herbs and spices
from Frontier Naturals.
Health Benefits of Fermented foods
Lactic acid-fermented vegetables are not only tasty, but they also exert stimulating
and healing effects on our various body functions. Unpasturized sauerkraut
eliminates disease-causing "bad" bacteria, and reintroduces friendly "good"
bacteria such as Lactobacillus acidophilus, which are necessary for healthy digestion and
proper elimination of waste products. Lactic acid-fermented vegetables are
highly nutritious and low in calories. They contain high amounts of vitamins, minerals
and enzymes. Lactic acid-fermented vegetables have been used for their healing
benefits as far back as 50AD, and a volume of new research is continually discovering
new benefits. Medical research shows that
sauerkraut and other lactic acid-fermented vegetables lower the level of fat in the blood,
strengthen the heart, improve circulation, and help lower blood pressure.
Research also shows that lactic acid-fermented foods encourage pancreatic
function which is of benefit to diabetics. They stimulate digestive
secretions, and detoxify and activate the intestines to prevent constipation.
They support the body's immune system. All this and they are delicious besides!

The Perfect Pickler
The Perfect Pickler makes easy work of turning just about any vegetable into delicious, healthful, traditionally fermented pickles, and it will do it in just 4 days compared to several weeks in conventional
crocks. With the Perfect Pickler your pickles are made in a sealed container, with an "air lock" on top, to
allow fermenting gases to escape, but won't allow outside air in. This keeps your pickles cleaner.
I love making pickles in the Perfect Pickler because it is so easy. The Perfect Pickler allows everyone the
chance to have fresh fermented foods all the time.
It is smaller and lighter than most stone crocks, yet produces very similar results. Its smaller size makes it
easy to have more than one going at a time, allowing you to have different vegetables without the hassle of large
quantities, and large crocks taking up space. The Perfect Pickler does not take the place of stoneware crocks, but
it does give you more versatility with its size. It makes great Sauerkraut, as well as, just about any other fermented
foods. The Perfect Pickler's plastic jar holds 64 oz.
What a great kitchen tool for every day macrobiotic meals, or aiding those with
digestive challenges in need of those vital enzymes and probiotics.
We are sorry the Perfect Pickler is out of stock.

Glass Weight upgrade for Picklemeister
or 1 cup storage container w/lid
You can use this 1 cup glass container without its lid to replace the plastic spacer that comes with the Picklemeister. For those of you who would prefer glass,
instead of plastic, to be in contact with your food this is a great upgrade. Using this container, the only plastic left in the Picklemeister is
the top lid which does not really come in contact with your food.
This glass upgrade takes up a little more room in your Picklemeister, so when you are filling your fermenting jar keep this in mind, and leave a little
extra space at the top of the jar.
This custard cup also makes a good baking dish, as well as a food storage container. It is great for leftovers with its plastic slip-on-lid to keep food fresh.
1/2 or 1 Gallon Glass Jar for Kombucha, Sun tea, ect.
or Replacement Jar for Picklemeister
These glass jars are great for making Kombucha tea and sun tea, as well as for storing bulk herbs, dried foods, cereals, grains,
or just about any kind of food or craft items. They can also be used as an additional or replacement jar for your Picklemeister
or Perfect Pickler should you need one. That way you can store your fermented pickles in the refrigerator while getting your next batch going.
You never have to be without.
The jar comes with a polypropylene flat cap with a foam liner which makes a tight seal, and is not harmed by liquids or moisture as some metal
lids and seals are.
The gallon jar measures 10 inches tall by 6 inches in diameter, and the inside diameter of the mouth is 3 7/8 inches.
1/2 Gallon Glass Fermentation Jar -
Measures 6 3/8 inches tall by 6 inches in diameter, and the inside diameter of the mouth is 3 7/8 inches.
