Harsch Earthenware Fermentation Crock
Steinzeugwerk
Made in Germany
After reading about the health benefits of unpasturized lactic
acid-fermented vegetables, we were convinced that adding them to our diet
would be a beneficial step. Sauerkraut is hard to find unpasturized and other
dvegetables are virtually unobtainable. So we set out to ferment our own with memories
of skimming slime from past experiences. Thus we were delighted to discover
a new fermentation crock manufactured by Harsch, a German company that has
a patented gutter and lid which creates a water seal that does away with the need for constant
cleaning. The Harsch crock makes it easy for you to ferment and eat fresh,
locally grown vegetables. It eliminates the need for the skimming of kahm yeast,
a white slimy substance that forms on the top of the sauerkraut where there
is access to fresh air. While the kalm is not in the least harmful, it is disgusting, and
it is so nice not having to wash the cloth, board or stone covering on a
regular basis during fermentation. Kept in a cool place, the Harsch crock can be
left alone for months while the vegetables inside get
better and better. The only chore that these crocks demand is that you
occasionally top up the water in the gutter that seals off the contents from the
outside air.
The Harsch Fermentation Crocks are covered with a lead free glaze and are
very easy to clean. They feature sturdy carrying handles that add to the
stability of the gutter by acting as buttresses. The crocks come with two small,
semicircular, stoneware "weight stones" that are designed to rest on top of the
vegetables to create the pressure needed for fermentation, and to protect the
food from decay. With the Harsch Crock there is no need for the traditional paraphernalia of
cloth, board or stone, and best of all the kahn yeast no longer forms.
Simple instructions with recipes are included with the crocks.

Health Benefits of Fermented foods
Lactic acid-fermented vegetables are not only tasty, but they also exert stimulating
and healing effects on our various body functions. Unpasturized sauerkraut
eliminates disease-causing "bad" bacteria, and reintroduces friendly "good"
bacteria such as Lactobacillus acidophilus, which are necessary for healthy digestion and
proper elimination of waste products. Lactic acid-fermented vegetables are
highly nutritious and low in calories. They contain high amounts of vitamins, minerals
and enzymes. Lactic acid-fermented vegetables have been used for their healing
benefits as far back as 50AD, and a volume of new research is continually discovering
new benefits. Medical research shows that
sauerkraut and other lactic acid-fermented vegetables lower the level of fat in the blood,
strengthen the heart, improve circulation, and help lower blood pressure.
Research also shows that lactic acid-fermented foods encourage pancreatic
function which is of benefit to diabetics. They stimulate digestive
secretions, and detoxify and activate the intestines to prevent constipation.
They support the body's immune system. All this and they are delicious besides!
Wooden Cabbage Tamper
for sauerkraut and more
Handmade in the USA
Whatever you want to call it; stomper, stamper, tamper, pounder, mallet, or masher, this kitchen tool gets the job done.
These Sauerkraut Tampers are turned of solid poplar wood, salvaged from trees blown down in storms that would have been left in the woods to rot or used
for firewood. When you purchase one of these Sauerkraut Tampers from us you are helping to preserve healthy forest management.
Because these Kraut Pounders are made by a local craftsman by hand, each one has a slightly different
shape, feel, color and appearance, but each and everyone is made with your needs in mind and is ready to be of service to you.
Poplar wood was chosen for these Sauerkraut Tampers as it outgases very little, and does not have a strong or objectionable odor or taste. These qualities make it superior for individuals addressing health problems related to toxicity or those with allergies, chronic disease, or chemical sensitivities; as well as all people who desire to preserve their health. Poplar is the wood recommended by toxicologists.
These Wooden Cabbage Tampers measure 24 inches long, by 31/2 inches in diameter. Of course, all measurements are approximate and will vary slightly.
The 24 inch length is adequate for you to have good reach in even a large sauerkraut crock. The wide base gives you good surface area for packing
after each new layer of cabbage, salt, and spices is added to your crock. Used in circular patterns it releases juices from the cabbage, giving you a
good pack, and getting your fermentation off to a good start.
To wash your Wooden Sauerkraut Tamper, simply scrub throughly in warm water, wipe dripping water immediately, and set to dry.
The Wooden Cabbage-Sauerkraut Tamper is a wonderful companion to our Harsh Crocks.

The Perfect Pickler
The Perfect Pickler makes easy work of turning just about any vegetable into delicious, healthful, traditionally fermented pickles, and it will do it in just 4 days compared to several weeks in conventional
crocks. With the Perfect Pickler your pickles are made in a sealed container, with an "air lock" on top, to
allow fermenting gases to escape, but won't allow outside air in. This keeps your pickles cleaner.
I love making pickles in the Perfect Pickler because it is so easy. The Perfect Pickler allows everyone the
chance to have fresh fermented foods all the time.
It is smaller and lighter than most stone crocks, yet produces very similar results. Its smaller size makes it
easy to have more than one going at a time, allowing you to have different vegetables without the hassle of large
quantities, and large crocks taking up space. The Perfect Pickler does not take the place of stoneware crocks, but
it does give you more versatility with its size. It makes great Sauerkraut, as well as, just about any other fermented
foods. The Perfect Pickler's plastic jar holds 64 oz.
What a great kitchen tool for every day macrobiotic meals, or aiding those with
digestive challenges in need of those vital enzymes and probiotics.

your table in just
4-5 days. Best of all, the Picklemeister comes with a non-plastic, glass jar. The Picklemeister comes in
your choice of a 1 gallon or 1/2 gallon size. The generous sized jar allows you to
keep an abundant
supply of fermented vegetables on hand.
There may be no easier or more cost effective way to get your daily dose of beneficial vitamins, minerals, enzymes and
probiotics
than with lactic acid fermented vegetables. They actually taste delicious and are so much cheaper than many costly
supplements.
The variety of pickled vegetables that can be made is endless; from traditional dill pickles, sauerkraut and kim chi
to pickled radishes,

Glass Weight upgrade for Picklemeister
or 1 cup storage container w/lid
You can use this 1 cup glass container without its lid to replace the plastic spacer that comes with the Picklemeister. For those of you who would prefer glass,
instead of plastic, to be in contact with your food this is a great upgrade. Using this container, the only plastic left in the Picklemeister is
the top lid which does not really come in contact with your food.
This glass upgrade takes up a little more room in your Picklemeister, so when you are filling your fermenting jar keep this in mind, and leave a little
extra space at the top of the jar.
This custard cup also makes a good baking dish, as well as a food storage container. It is great for leftovers with its plastic slip-on-lid to keep food fresh.

You never have to be without.
The jar comes with a polypropylene flat cap with a foam liner which makes a tight seal, and is not harmed by liquids or moisture as some metal
lids and seals are.
The gallon jar measures 10 inches tall by 6 inches in diameter, and the inside diameter of the mouth is 3 7/8 inches.
